Who doesn’t love a deliciously decadent pizza? 🍕❣️
Although not the most authentic, this vegan and gluten-free pesto pizza did not lack any flavour. It was made with a thin and crispy cauliflower crust, topped with a tangy homemade vegan pesto, and loaded with veggies 🙌🏼
As you can probably tell, I love pizza with LOTS of fresh veggies‼️ For this recipe, I topped my pizza with roasted cherry tomatoes, bell peppers, zucchini, and mushrooms. However, you can also top your pizza with thinly sliced eggplant, spinach, caramelized onions, sun-dried tomatoes, artichokes, olives, and other ingredients you may already have in your fridge. This pizza can also be made with the crust of your choice. Feel free to substitute the store-bought Traderjoes cauliflower crust with your favourite homemade or store-bought pizza dough.
